Waste Free Wednesday: Banana Pancakes

We know we're a little late with Pancake Day being yesterday but in the spirit of using things up, why not turn your overripe bananas into delicious pancakes?

Some cite the origins of Pancake Day as a way of using up ingredients. We know we’re a little late with Pancake Day being yesterday but in the spirit of using things up, why not turn your overripe bananas into delicious pancakes?

  • 2 eggs
  • 1 tsp baking powder
  • 350g self-raising flour
  • 2-3 ripe bananas
  • 250ml milk
  • 1 tsp vanilla extract
  1. Sieve the flour and baking powder together into a bowl
  2. Mash the bananas until smooth
  3. Whisk the eggs, vanilla extract and milk together with the bananas
  4. Combine the ingredients and whisk until you form a batter
  5. Add the batter to the frying pan and cook for several minutes
  6. Flip the pancake over and cook the other side
  7. Repeat until all the batter has been used
  8. Enjoy!

  • Serve with maple syrup and extra banana slices
