
Some cite the origins of Pancake Day as a way of using up ingredients. We know we’re a little late with Pancake Day being yesterday but in the spirit of using things up, why not turn your overripe bananas into delicious pancakes?

- 2 eggs
- 1 tsp baking powder
- 350g self-raising flour
- 2-3 ripe bananas
- 250ml milk
- 1 tsp vanilla extract

- Sieve the flour and baking powder together into a bowl
- Mash the bananas until smooth
- Whisk the eggs, vanilla extract and milk together with the bananas
- Combine the ingredients and whisk until you form a batter
- Add the batter to the frying pan and cook for several minutes
- Flip the pancake over and cook the other side
- Repeat until all the batter has been used
- Enjoy!

- Serve with maple syrup and extra banana slices
